Basic Sponge

ingredients:
     175g Self Raising Flour
     115g Caster Sugar
     115g Butter
     2 Eggs
Method:
     Cream the butter and sugar together in a bowl. Beat the eggs and add into the mixture. Add the flour to the mixture a little at a time, mixing between additions. Pour the mixture into a ready lined cake tin or cup cases and bake in the oven on gas mark 6 / 200C for 10 minutes.

There are many variations of this recipe for a whole variety of cakes:
- Substitute a little of the flour with cocoa powder
- Add in some mint essesnce
- Add in some chocolate chips
- Add in some dried fruit
- A mixture of the above
